There has been a lot going on here at the wild rabbit over the last couple of months, so I wanted to share some our news and give an update on what we’ve been up to.
As the cold has been starting to set in with winter well and truly here, we decided to start shuffling a few things around to get ready for the busy summer season ahead. One of our biggest changes has been our recent expansion to Newcastle. We’re now keeping even busier servicing the Newcastle area….where we have some beautiful locations right on our door step, with the Hunter Valley, Nelson Bay & Central Coast just a stone’s throw away from our new base here in Newcastle. Don’t worry Sydney we still love you too, and we will continue to bring you our grazing feasts, picnics, cocktail parties, and anything else we can help you with to satisfy your food desires.
While we settle into our new HQ up here in Newcastle….and while we impatiently wait for summer to arrive so we can enjoy all the beautiful beaches and the sunny and relaxed Newcastle vibes….we decided to kick things off with a bit of a celebration.
We had a great night meeting some of the creative, talented and super friendly people of Newcastle, while we got the chance to showcase a bit of what we do, and share some of the food we love with some of the locals. Our Newcastle launch event was a great opportunity for us to reach out to the pool of talent in here in the Newcastle & Hunter Regions to find the best growers, producers, makers, and creative thinkers to start ongoing relationships with and to help grow our business here.
It was an exciting night, held in the most amazing venue space which used to be the old Police Station back in the day, The Lock Up is a beautiful heritage building with a great space called The Yard…the old exercise yard. The great textures on the walls and the fantastic character of the space was the perfect backdrop for the night.
Our signature grazing table was the centre of attention as always, adorned in cheeses, breads, pears, grapes & figs, nuts, olives, dips, crudités, charcuterie and much more…with an absolutely stunning floral arrangement by the clever Little Wren Flowers. Guests were offered an array of canapés to warm them up on a chilly winter night…including beetroot, goats cheese & caramelized onion crostini; thyme & provolone stuffed arancini; poached chicken tartlets with preserved lemon cream and pistachio & green olive tapenade; potato rosti with pepper beef, horseradish cream & mustard cress; slow cooked mechoui lamb with labne & pomegranate on little pitas, potato rosti with smoked ocean trout & dill cream; and then followed by sticky Korean pork sliders with pickled vegetables & sriracha mayo…then topped off with lime & chocolate brownie bites with a margarita cream, because there is always room for dessert.
We had delicious wines from local Hunter valley wineries; Krinklewood and Audrey Wilkinson keeping everyone happy, and beautiful acoustic duo Brown Bear & Hooves keeping us entertained. The ladies from The Wedding Designers created a beautiful setup for us too…with lighting, seating and the fantastic bar setup transforming the space ready for a great night.
